Rajasthani Instant Pitod ki Sabzi – When your refrigerator has no veggies to cook and you wanna surprise with some special treat then a must-try dish is Rajasthani Pitod ki Sabzi. The use of gram flour in combination with curd has a variety of recreational dishes in Rajasthan. The credit of these innovation goes to the people who live here in this semi-arid and arid region of India. This is a very simple dish with a few handfuls of ingredients and easily made within 10-15 minutes of time. Also, we don’t need any green vegetable to add in, to the traditional method though if you do so it will enhance the flavor. Ingredients for Pitod
- Oil: 1 tbsp
- Fresh Curd: 1 cup
- Gram Flour: 1 cup
- Red Chilly Powder: 1 tsp
- Cumin Seeds: 1/2 tsp
- Turmeric Powder: 1/2 tsp
- Dried Mint leaves
Prepare
- Greece the wok with oil.
- Add fresh curd and gram flour
- Put Red Chilly Powder, Cumin Seeds, Tumeric & dried mint leaves
- Put this wok to low flame, stir continuously
- Once the paste thickens a bit, grease a plate
- Pour the mix into the plate and fix it with some watery palm.
- Once cooled, cut it with a knife in any shape, Pitod is ready to be put into the gravy.
Ingredients for Gravy
- Oil: 2 tbsp
- Chopped Onion: 1
- Red Chilly powder: 1 tsp
- Garlic Cloves: 5
- Turmeric Powder: 1 tsp
- Salt to taste
Prepare
- Take oil in a wok and add chopped onion
- As onion turns translucent, add all the above ingredients.
- Stir, add 1 cup curd water.
- Let it boil on high flame for 2 min
- Add 1 more cup of water, boil.
- Now add the chopped pitod, stir.
- Garnish with fresh coriander, serve.
