Jodhpuri Mirchi Bada Recipe – Every city has a staple food that gives a touch of local taste, so too has the Jodhpur by its grab and go snack which is Mirchi Vada or Mirchi Bada. Mirchi bada is ruling the land of Rajasthan for more than fifty years. It is said that “Jodhpur aae or mirchi bada nahi khaya to kya khaya” (you ate everything in Jodhpur but not mirchi bada then you ate nothing). This street food is not only unique for its relishing flavor but also for the blend of masalas used in it and its tangy taste makes a runny nose and whistling sound in ears especially at winter times but nothing freaky with that. This fried snack is fondly known as “Jodhpuri Mirchi Bada” around the state.
The popular and very famous hot spicy Mirchi Bada of Jodhpur is prepared with green long mirchis (Chilies), boiled and mashed potatoes and lastly coated with gram flour. A green chili is in center, surrounded with potato masala mix and then deep fried with the gram flour over it.
Come let us see how to prepare this fast ready snack at home. For filling, mash boiled potatoes with hand (wish to add green peas, do it here) and put it in a bowl. To tangy taste add chopped green chili, fresh green coriander, red chili powder, coriander powder , a pinch of heeng (asafetida), salt as per taste, chaat masala (additionally sauf can be added) , and mix all well.
Now for batter, add gram flour, baking powder, add salt as per taste (may be 1 tbsp), red chili powder (may be ½ tbsp), water (may be 1 cup) and mix well in a bowl. Remember not to add too much of water as we need to prepare a thick batter to make an easy coat. Keep this aside for 5-10 minutes. Now slit green chilies (better we choose large sized chilies for a nice definite shape), scoop out seeds and fill them with the filling mixture. Now coat the mirchis by dipping them one by one into the gram flour batter and deep fry them until golden brown in a kadai (wok) with sufficient heated oil to a moderate temperature. Drain onto an absorbent paper and serve hot with mint chutney.
