Rajasthani Instant Pitod ki Sabzi – When your refrigerator has no veggies to cook and you wanna surprise with some special treat then a must-try dish is Rajasthani Pitod ki Sabzi. The use of gram flour in combination with curd has a variety of recreational dishes in Rajasthan. The credit of these innovation goes to the people who live here in this semi-arid and arid region of India. This is a very simple dish with a few handfuls of ingredients and easily made within 10-15 minutes of time. Also, we don’t need any green vegetable to add in, to the traditional method though if you do so it will enhance the flavor. Let’s try out this authentic Rajasthani dish directly from mom’s kitchen of Jodhpur Ke Chatore, here we go…

Ingredients for Pitod

  1. Oil: 1 tbsp
  2. Fresh Curd: 1 cup
  3. Gram Flour: 1 cup
  4. Red Chilly Powder: 1 tsp
  5. Cumin Seeds: 1/2 tsp
  6. Turmeric Powder: 1/2 tsp
  7. Dried Mint leaves

Prepare

  1. Greece the wok with oil.
  2. Add fresh curd and gram flour
  3. Put Red Chilly Powder, Cumin Seeds, Tumeric & dried mint leaves
  4. Put this wok to low flame, stir continuously
  5. Once the paste thickens a bit, grease a plate
  6. Pour the mix into the plate and fix it with some watery palm.
  7. Once cooled, cut it with a knife in any shape, Pitod is ready to be put into the gravy.

Ingredients for Gravy

  1. Oil: 2 tbsp
  2. Chopped Onion: 1
  3. Red Chilly powder: 1 tsp
  4. Garlic Cloves: 5
  5. Turmeric Powder: 1 tsp
  6. Salt to taste

Prepare

  1. Take oil in a wok and add chopped onion
  2. As onion turns translucent, add all the above ingredients.
  3. Stir, add 1 cup curd water.
  4. Let it boil on high flame for 2 min
  5. Add 1 more cup of water, boil.
  6. Now add the chopped pitod, stir.
  7. Garnish with fresh coriander, serve.
